After the grapes are pressed yeast is added and the fermentation process begins. The yeast eats the natural sugars also called Brix in the grape juice and produces Alcohol as a byproduct. The exact amount of alcohol can be determined by a the winemaker using a hydrometer.

Inside the winery, you will find our tank room filled with Italian, stainless-steel, tanks and equipment.

Each tank can maintain a predefined, computer controlled temperature via the cooling jackets on the outside of the tanks seen in the photos.

Two large observation windows to our tank room are available to visitors from our tasting room bar.
